Cinnamon & Clove Breakfast Buns

Ingredients

  • Bread Ingredients
    • 1 cup warm milk
    • 1/4 oz packet active dry yeast
    • 1/3 cup melted butter
    • 2 large eggs
    • 1/2 cup sugar
    • 4 1/2 cups bread flour
    • 1 tsp salt
  • Filling Ingredients
    • 1/3 cup butter softened
    • 1 cup brown sugar
    • 2 tbs + 1 tsp ground cinnamon
    • 1 tsp ground cloves
  • Icing Ingredients
    • 2 oz cream cheese
    • 1/3 oz butter softened
    • 1 1/2 cup powdered sugar
    • 1 tsp vanilla extract
    • pinch of salt

Step-by-Step

  • Dissolve the yeast in the milk in a mixing bowl
  • Add the butter, sugar, salt and eggs and mix well
  • Slowly mix in the flour
  • Once combined, dust your hands with flour and knead the dough for 2-3 minutes
  • Form the dough into a ball and cover, let it rise at room temperature for approximately 1 hour (it should about double in size)
  • Mix the brown sugar, cinnamon and cloves in a separate bowl
  • Roll the dough out on a lightly floured surface into a rectangle that’s about 1/4 – 1/2 inch thick
  • Spread the softened butter on the dough and top evenly with sugar, cinnamon and clove mixture
  • Roll up the dough and cut into 1 – 1 1/2 inch slices
  • Put the cinnamon rolls into a greased pan (or two depending on the size) and let them rise until doubled in size.
    • If you want to bake these fresh in the morning, place the rolls in the refrigerator immediately and let them rise overnight
  • Preheat oven to 400 degrees and bake for approximately 15 minutes or until golden brown
  • Mix together the butter, cream cheese, powdered sugar, vanilla and salt for the icing
  • Spread icing on the rolls and serve!
    • If you want the icing to melt into the rolls ice them while they’re still warm. If you want the icing to keep its shape and texture ice the rolls once they’ve cooled
  • Makes 12 – 15 rolls

Other Tips

  • When it’s a challenge to roll the dough evenly I cut the edges to help form the rectangle. With these scraps of dough you can brush them with butter, dip them in any leftover cinnamon sugar mix and tie them in a knot to make bite size rolls. These are an excellent way to taste test
  • If cream cheese icing isn’t your thing you can change up the recipe to replace the cream cheese with more butter. You can also spice up the icing by sprinkling in the spices of your choice to change up the flavor (cinnamon, pumpkin pie spice, cloves, nutmeg)
  • It’s fun to experiment so modify the spice mixture to your liking. Thanksgiving morning I like to make these with pumpkin pie spice and pecans
  • I find it easier to spread the icing via a piping bag or ziplock bag with the corner cut
  • These will make your kitchen smell incredibly comfy and cozy so be prepared to kick back and enjoy with a cup of coffee
