Ingredients
- 1/2 cup butter at room temperature
- 1 cup white sugar
- 1 tsp vanilla extract
- 2 large eggs
- 1 1/4 cup flour
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp cinnamon
- 3 over-ripe bananas
Step-by-Step
- Mix butter and sugar together until fluffy
- Mix in vanilla extract and eggs until well combined
- In a separate bowl combine flour, salt, cinnamon, and baking soda and add dry ingredients to mixer
- In a separate bowl mash bananas with a fork or potato masher and add to mixer
- Pour batter into a greased bread pan or three mini-bread pans
- Bake at 350 degrees for 30 – 45 minutes (cook time may vary by oven and bread pan). Bake until the top of the bread is brown and a toothpick tester comes out clean.
Extra Tips
- Riper bananas will make tastier bread so wait until they’re nice and spotty. If you don’t want to bake them right away you can put the bananas in the freezer to use at a later date.
- If you notice the top and sides of the bread are browning too quickly but the center is not fully cooked yet, put aluminum foil over the top of the pan to slow down the browning.
- A heated slice of this bread tastes great with a little butter on top. If you bake it the night before it will be ready to eat with coffee bright and early the next morning.
